I Think the powder is being re-hydratet by adding water, and the gentle heat accelerate this proces. Tastewise the GP seems much less bitter than the actual powder.
well, I do not have the scientific information for you but I've seen many time Admins saying that to cook the turmeric powder increase and maximise the bio availability- absorption of the turmeric by your body.
and I can tell you that I have experienced the 2 ways: giving raw turmeric powder + oil+ pepper to my dogs for fews years before to know the GP recipe and since I'm doing the GP, I see more results , in less time and faster. !
I don't have data to back this up. But my knowledge of chemistry suggests that heating it gently that second time helps the curcuminoids dissolve into the oil present in the powder. Yes, we're adding oil too, but any step that makes the curcuminoids more soluble in the oil already present in the powder should help it be better absorbed in the body. Traditional Indian practice knew this to be the case as well, though they would not have understood why.
Lizzy Plat-Coelers from what I understand cooking the past will bind the tumeric to the oil better, which in turn allows it to be digested and absorbed better.
