Met toestemming van Mogens Eliasen:
"Man wants to classify everything - and it does not always follow Mother Nature's intentions... ;-) The limits between our classifications do not always make sense - and heart is definitely an example of that.
Heart is muscle - but a special kind of muscle that is different from the muscles you use to move your arms and legs with. The stomach and the intestines also have muscles - of yet another nature. Heart meat contains many of the amino acids from proteins that are typical in organ meat, but not as many as, for instance, kidney and liver.
Heart makes up less than 1% of a prey animal's weight - and shold not make up much more on your dog's menu either. If you want to stretch it to 5%, I see no big problem - but if you feed, say, 10% or more, you are screwing up your balances, because heart meat, although very rich in certain proteins, is also a very poor source of others.... So, in other words, if your choice of category for heart messes up your balance of the diet, then there is something fundamentally wrong with your balance.... Alternatively, you are trying to copy a diet recipe that is WAY too specific in terms of numbers!".
